Aldaric acid is a type of dicarboxylic acid obtained by oxidizing both the aldehyde and primary alcohol groups of an aldose to carboxylic acids. It represents the fully oxidized form of a monosaccharide where all potential reactive sites have been converted to carboxyl groups.
